Monster's checkout is divided into four parts: Login, Address, Order Options,  Review & Payment.
My third party w Mal's is 5 pages but it's all clean.
Page 5 lands the customer at the Gateway.
Again it's clean and lean and I have very little cart abandonment.
I went ahead and altered my site's checkout page to the multi-page version.

From the cart page there's

Shipping & Billing address entry --> Payment Method Choice & Entry --> Order Review --> Order confirmation

It's much cleaner this way. There's also an option to join the mailing list or rate the merchant, but they don't distract.

I;m glad I brought this up. I was afraid the one-page checkout might be too daunting of a form for the averag person to fill out, even though I'm OK with them.

A 5-page clean and mean checkout is better than a one page mess. So I suppose it really comes down to whether or not it flows.
I think you are on the right track... you said something about them
feeling like they were finalizing the sale and to me a few pages here and there
may make peeps feel they are doing so.

1 page may work well for some sites, just hard to really tell unless you see
what's on those pages.

Mine for example have no side columns with more product or distractions.
In a way that may be to my own detriment but on the other hand
people don't usually buy more than one of my products at a time unless
they are buying for themselves and another for a gift.
I run incentives for that like FREE coat of  polyurethane
if you buy two or more. Seems to work but I really like to cater to the one on one
and although my products are similar each one has it's own unique characteristics and a measurement can be off slightly from item to item so to me one per household works well.

Actually, same here. I thought it might deter some sales--yet I also thought it might invite people to focus on the process, improving completion rate.

I'm using Yahoo! Stores for my current new website. I didn't fancy the idea of them getting a small slice--but at the same time, there's a ton of easy to configure extras and powerful tools on the backend. So far, I'm enjoying it. I can also port everything over to Monster Commerce if I outgrow or dislike Yahoo.

My former site used oscommerce.

Upselling is a great idea. I'm also kicking around a frequent buyer club idea.
